Recipe: Bite-Size Caprese Salad Appetizers


I got home from work the other day and wanted to make a Caprese Salad to accompany our dinner. I didn't have any large tomatoes and didn't fancy a trip to the store...so, I got creative! I had grape tomatoes, so I decided to make bite-sized Caprese Salad appetizers. Take a look. I think these would make a great appetizer for a party too!

Here's the recipe...

Ingredients:
Grape Tomatoes
Fresh Mozerella Cheese
Fresh basil leaves
Extra Virgin Olive Oil
Kosher Salt
Cracked Black Pepper

Slice the top and bottom off each tomato, cut in half, and place on a dish with the middle up. Cut each mozerella ball in half and place on top of each tomato half. Top with chopped basil, olive oil and salt and pepper to taste. Easy!

Well, I've got some more cardboard fun in store for the upcoming "Marvel-ous" Spiderman party!

Inspiration: Mr Men and/or Little Miss Party

I was so happy this morning when I turned on my computer to see Google's doodles of the day: several Mr. Men-themed and Little Miss-themed doodles to celebrate the author's 76th birthday (hit refresh on the Google homepage to see them all!) :-) I loved Mr. Men and Little Miss books while growing up in the UK. My son loves them too--I bought the whole set of books for him online from a vendor in the UK!! He He. Check out the Google doodles:












I know the Mr. Men aren't as popular in the US, but the doodles are making me want to throw a Mr. Men party! Here's some inspiration...

Enough inspiration to get the wheels turning. I'm imagining Mr. Small's cottage as the venue (or, rather, my house turned into Mr. Small's cottage complete with white picket fences)...lots of Cleverland animals...Walter the worm decorations...Mr. Men lanterns...Mr. Greedy's dream menu for the party food....Mr. Jelly's jello...rides in Mr. Funny's shoe car...Mr. Bump's apple orchard...Mr. Funny party hats...white and yellow daisies all around...fluffy white clouds...fluffy green trees...ahhhhhh...guess who's daydreaming like Mr. Daydream! :-)
